Banana Chip Nachos

Whole30-compliant Nachos.
This was so yummy! 
My favorite part were the banana chips. I sliced a plantain banana into thin slices and tossed them with coconut oil. I baked them for about 20 mins at 400F (until they looked toasted). I’m going to bake a batch for snacking 🙂
Then I layered the banana chips with seasoned chicken meat and homemade guacamole.
